OVERVIEW

Ajowan or Ajwain (Trachyspermum Ammi or Trachyspermum copticum) has been a part of the Indian traditional regimen and is also used as a popular spice. It is an erect, aromatic, glabrous or minutely pubescent, branched annual with striate stem, white flowers, up to 90 cm height and the plant is native of Egypt and is cultivated in India, Iran, Pakistan, Afghanistan and Iraq. In India it is cultivated in Utter Pradesh, Gujarat, Rajasthan, Maharashtra, Madhya Pradesh, Bihar and West Bengal. It resembles cumin, fennel, caraway and smells like thyme. These seeds contain iron, calcium, thiamine, niacin, carotene, riboflavin, phosphorus and fiber.

Ajowan essential oil extracted from these seeds through steam distillation process possess about 50% of thymol; the most powerful therapeutic ingredient known for its antiseptic, antimicrobial, anesthetic and pain-relieving qualities, along with dipentene, carvacrol, p-cymene, a-terpinene, limonene, a-pinene, styrene, b-phyllanderene, carvone and dillapiole.
