OVERVIEW

Gamma-terpinene (Ex. Ajowan oil) is one of three isomeric monoterpenes differing in the positions of their two double bonds (alpha- and beta-terpinene being the others). It is a monoterpene and a major component of essential oils made from citrus fruits and shows strong antioxidant activity in various assay systems. When isolated, gamma-terpinene has a colorless, oil consistency with a woody, lemon-lime scent.

Gamma-Terpinene’s primary use is for flavoring and improving scent in a variety of products. It is used in the preparation of artificial lemon and peppermint essential oil. This terpene is a favorite among perfume and cosmetic companies for its uplifting yet soothing aroma. For the same reason, it is commonly used in aromatherapy and essential oils. With a taste matching its smell, it is also used as a flavoring agent for various foods such as candies and soft drinks.
